2 tsp dry instant yeast

1 tsp salt

1 ½ cups sesame seeds, lightly toasted

½ cup molasses

1 ½ cups warm water

¼ cup water

Instructions:

Stir together 3 and ¼ cups of flour and yeast, plus salt in a large bowl.

Gradually add warm water, mixing and kneading by the hand until the dough becomes elastic and smooth.

Form into a ball, cover with a sheet of cloth and set aside until it grows double in size, about an hour.

Meanwhile, stir together molasses, the remaining 1 tablespoon of flour, and water in a bowl. Set aside.

Place sesame seeds in another bowl and set aside.

When the dough is ready, form into a long log, divide into 12 equal pieces.

Roll two logs into a rope that’s about 20 inches long, then form into simit by putting the two side by side and pinching the ends to put them together. Twist to create a braid. Repeat with the remaining dough.

Coat the simit in molasses mixture, then roll in sesame seeds.

Preheat the oven to 350 degrees F and prepare a parchment paper lined baking tray where you will arrange the prepared simit.

Bake them for about 20 minutes until nicely golden brown.

Serve and enjoy.
